Peru Travel News: Aqua Expeditions' Pedro Miguel Schiaffino Joins Most Influential Chefs in the World

Peru. March. (Aqua Expeditions). Earlier this year. Aqua Expeditions' own Executive Chef. Pedro Miguel Schiaffino. joined the shortlist of influential chefs making a breakthrough in 2011 at the 9th annual Madrid Fusion culinary summit. Showcasing established and up-and-coming food trends and personalities around the globe. Madrid Fusion has garnered a following of press. insiders. "taste makers" and influencers. and Chef Schiaffino was there as part of a Peruvian delegation helping to put Peruvian cuisine "on the map."

Held in January in Madrid. this year's three-day culinary summit featured a showcase of traditional Peruvian fare. including several varieties of ceviche and lomo saltado. Additionally. two of Peru's star chefs. Gaston Acurio and Pedro Miguel Schiaffino. were named two of the most influential chefs in the world. as voted by 300 journalist judges attending the event.

Taking his experiences from Madrid Fusion. Pedro Miguel Schiaffino is preparing to launch the first-ever English-language Amazonian cookbook later this year. The book. titled From the Kitchens of Aqua Expeditions. will focus on traditional. regional Amazonian cuisine with a modern flare as it is served on the M/V Aqua and upcoming M/V Aria. The cookbook will not only serve as an introduction to Peru's exotic fare. it will also act as a diary of life on the river with anecdotes from Aqua's local staff and guests.
