On board B.I.C. Humboldt. a Peruvian oceanographic research vessel. Callao Regional Government celebrated on Monday the National Cebiche Day by providing special recognition to local fishermen and cebicherias -seafood restaurants.
Callao governor Edwin Jacinto Aguirre bestowed the Escudo del Callao (Coat of Callao) on fishermen in appreciation to their contribution towards catching fish from the sea.
The most popular Cebicherias –traditional seafood restaurants- were also awarded.
Aguirre stated that 'El Escudo del Callao' is for recognizing the fisher’s hard labor and their important help for preparing the flagship dish Cebiche.
The event intended to recognize the hard work and sacrifice of fishermen during the process involved in the fish production chain. which makes possible the preparation of cebiche.
The festival was sponsored by Peru's Association of Seafood Restaurants (ARMAP) which in 2008 helped Callao to prepare a large cebiche and set the Guinness Record for the biggest Cebiche in the world.
